Japanese bar food, liquor and burgers

Kerby Craig—winner of six-consecutive Sydney Morning Herald Good Food Guide hats as Head Chef at Koi Restaurant in Woolwich and for his fine dining Restaurant UME— found the inspiration for his latest passion-project in the street counter-culture of Tokyo.

In a quest for a burger above all others, he travelled far to taste the possibilities. Time and again he was let down by questionable patties, lifeless buns, and burgers drenched in lacklustre sauces. 

Then armed with a deep respect for all things Japanese and a healthy obsession with perfection and quality in food preparation, his epiphany came when he discovered how to capture the essence of Umami—what the Japanese call the fifth taste sensation, seldom experienced in the western world.

The result is the UME Burger, a taste experience quite unlike any other. Finally someone has given the burger the respect it deserves.
